French Onion Soup 0

Soup has been around probably as long as people have been eating.  It’s cheap, filling, restorative, and democratic.

Onion soups have been popular at least as far back as Roman times. They were, throughout history, seen as food for poor people, since onions were plentiful, easy to grow, and considered a restorative food.

The modern version of Onion Soup originates in France in the 18th C., made from softened onions and, traditionally, beef broth. Onion soups are likewise found  in early English cookbooks and American cookbooks from colonial days to present.It is often finished by being placed under a grill in a ramekin with croutons and Gruyère melted on top. The crouton on top is reminiscent of using bread as “sops”.

Here are a couple of examples of early written Onion Soup recipes:

Cut your onions into very thin slices, fry them with butter, and after they are fried put them into a pot with water or with pease broth. After they are well sod, put in it a crust of bread and let it boile a very little; you may put some capers in it. Dry your bread then stove it; take up, and serve with one drop of vinegar.”

For myself, I like a lot of onions in my soup; almost stew-like.  If you prefer a brothier soup, either reduce the amount of onions or increase the broth.

Because onions do sweeten as they cook down, I don’t recommend using sweet onions like 1015’s, Vidalias, or Mauis.  They will make the soup too sweet.  Regular yellow onions are just fine. Plus, they’re cheaper.

This soup is traditionally made with beef broth.  However, you can use chicken or turkey broth if you want a lighter soup.  Or, use vegetable broth to make this vegetarian (or vegan if you omit the Gruyère or use soy cheese).

The best bread to use with this soup is a good crusty European-style bread like a baguette, ciabatta, pain au levain, etc.  These will hold up quite well if you decide to make the soup a gratin.

1.  Heat the olive oil in a stockpot or large saucepan over medium-high heat.  Add the onions, garlic, and the 1 teaspoon sugar and 1 teaspoon salt (these will help release the water from the onions and make them wilt more quickly).

Stir until the onions begin to heat through, turn the heat down to medium-low, cover and begin wilting the onions.

2.  After the first 30 minutes (stirring after each 15 minutes), uncover the onions (there will be a lot of liquid; it will cook down), add the thyme, and continue cooking until the onions are cooked down as much as you prefer, stirring every 15 minutes.  (If you are cooking your onions until they become very soft, you will want to stir them more often as they soften so they don’t begin to burn.)

At 45 minutes.  I generally cook them further down than this.  However, at this point, it's up to you how much further you'd like to go.

3.  Once the onions are cooked to your preference, increase the temperature to medium-high, add the white wine or apple cider (if using) and cook until the wine has evaporated.

4.  Add the broth and bring to a boil.  Lower the heat to medium and cook for 30 minutes.  Taste for seasoning.

5.  If you want to do the more traditional serving method, here it goes:  Turn on your oven to broil and place the rack in the top position. Ladle the soup into oven-proof bowls (the best bowls are ones that have handles; you can buy these at any restaurant supply – if you don’t have bowls with handles, place them on a baking sheet), place a piece of the toasted bread in the center and sprinkle on a healthy amount of the cheese.  Place the bowls under the broiler for just a minute or two so until the cheese melts and gets brown and bubbly.  Carefully remove the bowls from the oven and serve.

If you don’t want to go that route, simply serve the soup with the bread and cheese on the side.

One again, it’s time for Quick Meals You Can Make After Work.

This time, it’s Carrot Tart.  I guarantee you, even the kids will like it.  As well as any meat-and-potatoes eaters in your house. You can make it as a light dinner (or lunch) with just a salad, or, as a heartier meal with wild rice and a green vegetable or salad. (This is also an excellent cold-weather dish, believe it or not.)

Not too many extra notes for this recipe, really.  It’s pretty self-explanatory.  If you don’t have or prefer not to use honey, you can use maple syrup (the real stuff, not Mrs. Butterworth’s), or raw or brown sugar.

And, yes. I did use a frozen pie crust.

1 ea. 9-inch frozen pie crust or your favorite savory pie crust recipe

1.  If you are using a frozen crust, keep it frozen until you’re ready to fill it.  If you’re using a from-scratch crust, par-bake the crust at 425F for 15 minutes and let cool.

2.  In a medium saucepan, melt the butter and honey together over medium heat.

Add the carrots and toss in the butter-honey mixture.  Continue cooking until the carrots have softened slightly and all the liquid has evaporated, about 7 – 10 minutes.

Remove the carrots from the heat, spread out onto a plate or other flat surface and let cool for about 15 minutes.

3.  Mix together the milk, eggs, spices, and parsley or chervil.  Set aside.

4.  In the waiting pie shell, spread the carrots as evenly as possible over the bottom.

Slowly pour in the custard mixture.

Bake the tart at 375F for 30 – 35 minutes, or until a tester comes out clean.  Let sit for about 10 minutes, then serve.

Make this meal as light or as hearty as you like. It's a great cold-weather dish when it's served with wild rice and a lovely green vegetable like green beans, asparagus, or a bitter green like kale or mustard.

My Arabic Breakfast فطوري العربية 3

One of the great things about having a parent, or parents, who were born and/or grew up in another country is getting to learn and experience mores, manners, customs, and, yes, food that are different than what you might experience daily in the wider world.

My sisters and I grew up with just such a parent.  Our father is Palestinian.  He’s originally from a town called Nablus.  When he was born, it was a part of  western Jordan. Now it is in the Occupied West Bank under the supervision of the Palestinian Authority.  Dad came to the US in 1960 to go to college.  Eventually, he met and married our mom, graduated from college with an engineering degree, co-raised three girls without losing his mind, worked for the same company for 40 years, and happily retired.

Along the way, Dad did impart in us some of his old-world wisdom.  Or, at least tried to.  And while we didn’t always appreciate the lessons he tried to teach – especially Arabic, which I’m still struggling to learn – we always appreciated the food.

And while my sisters and I certainly ate with glee the kibbeh, sayadieh (fish with rice), mjudarah (lentils and rice), mishi waraq (stuffed grape leaves), and knaffeh (sweet  shredded phyllo dough with cheese) our parents made (Mom and Dad each have their specialties), we especially enjoyed breakfast with unrestrained glee.

Breakfast in the Middle East isn’t necessarily a rushed thing.  Well, it isn’t unless one has to rush off to work or school. Breakfast usually starts about 8 or 9 with a nice long chat over coffee.  Then, the food comes out.  It can be as simple as some jam, bread, and cheese on up to dips, za’atar (spice mix made with thyme, sumac, sesame seeds, and salt), fresh fruit and vegetables, olives, pickles, eggs, and occasionally leftovers from the night before.

Unlike in the West, coffee isn’t drunk at breakfast.  It’s used as an aperitif, digestive, at social gatherings, and with the desserts the Middle East is so famous for.  Juice, water, or hot sweet tea is drunk at breakfast.

Just to make you hungrier, here’s a picture of my family at the restaurant my cousin Salam owns with her husband. Tarweea. It serves breakfast 24 hours a day.  And it’s amazing.

The recipes I’m showing you are ubiquitous throughout the Middle East.  Like anywhere else, there are regional variations for each dish.  That being said, I’m going to show you the way I grew up eating these dishes and the recipes I learned Palestinian style.

Bread is dipped in the olive oil and then the za’atar.  It has a wonderful savory-slightly tart flavor.  Some people will also make a paste of the two, spread it on bread and toast the bread until the top is nice and bubbly.  It’s divine.

We also have some lebneh.  It is essentially yogurt cheese.  A lovely, delightfully slightly sour treat. Try it spread on bread with some tomato. Oh. Yeah.

Some farmers cheese is always essential on the table.  Jebne Nabulsi (Nablus Cheese) is our cheese of choice.  Farmers cheese is used in both sweet and savory dishes.  For sweet dishes, it’s usually boiled to remove the salt.  The cheese we get in the US is always packed in brine. If you’re able to buy it in Jordan, it’s much fresher. The difference is striking.

The first recipe I’ll show you is for Ful (pronounced “fool”) Mudammas (فول مدمس).  It’s a breakfast dish made with fava beans. It’s a dish that’s been traced back to ancient Egypt and is still a very popular breakfast choice throughout the Middle East and parts of Africa.

Now, I use the canned ones.   However, if you want to use fresh or used soaked dry beans, it’s up to you.

1 can fava beans, drained, liquid reserved

1/4 c. onion, finely minced

2 cl. garlic, minced

2 – 4 (depending on size and heat level) tabasco or pepperoncini peppers, minced

1/4 c. parsley, minced

Salt and pepper to taste

1.  In a small saucepan over medium-low heat, mix together the fava beans, onion, garlic, peppers,  about 2 – 3 tablespoons of the reserved liquid from the beans, and a pinch of salt & pepper.

Heat the mixture slowly, stirring occasionally.  Cook about 20 minutes.  Add more liquid if the beans become too dry.

2.  Once the mixture is cooked, taste it for seasoning and some lemon to taste.  Remove the saucepan from the heat and mash the beans, leaving some texture.  In other words, don’t make them a smooth mash.

3.  Place the ful on a plate, drizzle over some olive oil and additional parsley.

The next dish I’m going to show you is Baba Ghannouj (بابا غنوج.). It’s a smooth dip made with eggplant.  It can be served as a mezze, a salad, or a side dish.  It is sometimes served with sliced or finely diced vegetables on top.  Some will use parsley or mint.  In some parts of the Arab world, particularly Syria, pomegranate seeds or syrup are used as well.

Traditionally, the eggplant is grilled over an open flame until it’s soft and charred.  However, I’ve found the oven is an excellent alternative cooking source.

When buying eggplant, look for ones with a smooth unblemished skin and no soft spots.

1.  Prep the eggplant.  Heat your oven to 400F.  Line a baking sheet with foil and spray with non-stick spray.  Drizzle some olive oil on the bottom and spread to cover.

Take the eggplant, cut off the top, then cut in half lengthwise.

Place the eggplant cut side down on the baking sheet.  Drizzle to top with a little more oil and put in the oven.  Bake the eggplant until it’s soft, about 20 – 25 minutes.

2.  Meanwhile, if you are using pomegranate seeds, time to get the seeds out.

When buying a pomegranate, make sure there are no soft pots, the skin is smooth and free of blemishes, and be sure to check for pinholes in the skin.  That’s a sign of infestation or spoilage.  If you open a pomegranate and any of the seeds are brown or dried out, discard them.

Cut around the equator of the pomegranate just until you break through the skin.  Don’t cut all the way through or you’ll lose some seeds.

Pull the halves until they separate.  This takes a little doing, but it will happen.

I suggest wearing gloves for this next part. It is now time to separate the seeds from the membrane.  It’s really not difficult.  Just time consuming.  if you can remove the seeds in clusters, all the better.  The trick is to break as few seeds as possible and not include any of the membrane (edible, but very bitter).

3.  Check the eggplant.  Give it a quick poke with your finger or a fork.  If it feels soft, it’s ready to come out of the oven.  Take the eggplant halves off the baking sheet and set aside until cool enough to handle.

4.  when the eggplant is cool enough to handle, carefully peel off the skin and discard.

Place the peeled eggplant in a small bowl or dish.  Set aside.

5.  With a food processor running, drop the garlic cloves down through the feed tube and chop them.

Add the eggplant, tahineh, and a little salt.

Puree the ingredients until a smooth consistency is achieved.  Add a little lemon juice through the feed tube while the machine is running.  When the lemon is mixed in, taste the baba ghannouj for seasoning.

6.  Place the baba ghannouj into a bowl and garish with a little olive oil, some parsley, and a few of the pomegranate seeds.

As for the Poached Tomatoes and Garlic, I really don’t know if it’s an authentic part of the meal.  However, I remember my dad making this dish from time to time, so I do, too.  My husband and I  like this dish, so I make it for that reason as well.

1.  Place all the ingredients in a large skillet or shallow saucepan over low heat.

2.  While the ingredients cook, you can mash them a bit if you like. Just cook until the tomatoes have completely broken down, about 30 minutes.

Fried Nabulsi Cheese

1.  Take a few pieces of the Nabulsi cheese and cut them into smaller pieces (I usually cut them in half crosswise and then again lengthwise).  Place them in a bowl and rinse with water several times until it runs clear.  Let the cheese soak in the water to remove some of the salt.

Before you get ready to fry the cheese, take it out of the water and drain on paper towels.

2.  In a non-stick skillet over medium-high heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil.  Once the butter starts to foam, place a few pieces of the cheese in the skillet to cook.  Cook until each side is golden brown.

Drain the cooked cheese on paper towels and eat while still warm.  It doesn’t really keep once it’s cold.

Pasta alla Puttanesca 0

Pasta (or Spaghetti) alla Puttanesca, otherwise known as “Whore’s Spaghetti” (although you don’t have to tell the kids that), is a recipe with a slightly murky origin story. One of the more popular origin myths was that it was made up by a cook in a brothel who had very little to work with, so threw what she could find into a pot, cooked it, and served it with spaghetti.

That’s the story I always heard, anyway.  Well, apparently, it’s not true.

Many signs point to the dish actually originating in the mid-20th Century.  The first known reference to “spagehetti alla puttanesca” in Raffaele La Capria’s Ferito a Morte (Mortal Wound), a 1961 Italian novel.

in 2005, a restaurant owner named Sandro Petti claimed he invented the recipe for “Puttanesca” in the 1950’s.

According to Wikipedia (and several other sources):

“The moment of inspiration came, when near closing one evening, Petti found a group of customers sitting at one of his tables. Petti was low on ingredients and told them he didn’t have enough to make them a meal. They complained that it was late and they were hungry. “Facci una puttanata qualsiasi (Make any kind of garbage),” they insisted. In this usage, puttanata is an Italian noun meaning something worthless. It derives from the Italian word for whore, puttana.

Makes sense. Almost like the origin of Nachos.

The sauce on its own is called “sugo alla puttanesca” and the ingredients will differ slightly from region to region.  In Napoli, they don’t use anchovies.  While, in Lazio, they are used along with chile peppers.  However it’s made, it’s a very popular dish throughout Italy.

 

Now, to the recipe:

The main reasons I like this dish are its ease of preparation and its taste.  I’m an advocate of strong-tasting food and this sauce certainly fits that criteria.

And, yes. This dish is very efficacious.

As always, a few notes:

1.  Whatever regional variations there are for this dish, the constants always are olives, capers, and tomatoes.

2.  I prefer spaghetti with this dish.  However, you can use linguine, pappardelle, or fettucine as well.  You want to have a pasta that will stand up to the sauce.

3.  Be sure to rinse the capers and olives before you add them to the sauce.  Otherwise, the sauce will be like a salt lick.

4.  Make sure you buy the small capers, not the larger caperberries.

5.  Speaking of olives, save yourself some time and buy already pitted.  Also, be sure to buy brine-cured and not oil-cured.  Oil cured  olives are meant to be eaten out-of-hand.  They don’t really stand up to cooking.

6.  You can use any combination of olives you like.  I generally go with a mix of green and black.  If you can find them in bulk, great.  If you have to buy them in the jar, you’ll more than likely have to rinse off any seasoning included in the oil/brine in the jar.

7.  If you would like to make this sauce vegan or just don’t like anchovies, omit them.  For my part, though, the more the merrier.

1.  In a large skillet, heat the olive oil over medium-high heat.  Add the garlic and red pepper flakes and cook until the garlic just begins to brown.

2.  Add the capers and cook for 2 – 3 minutes, stirring frequently.

4.  Add the olives.  Cook another 3 – 5 minutes.

5.  Add the tomatoes.  Mix well.  Let the sauce just come to a boil, then turn down the heat to medium-low.  Cook the sauce for 20 – 25 minutes until it thickens slightly.  Stir occasionally.

6.  Meanwhile, make the pasta according to the package directions.

**At this point you can do 1 of 2 things.  You can either save a cup of the pasta water just before you drain the pasta and use it if you decide to toss the pasta and sauce together (it will loosen the sauce so it will combine with the pasta more easily); or, simply drain the pasta and spoon the sauce over just as you get ready to serve.

7.  After 20 – 25 minutes, remove the sauce from the heat, taste for seasoning, combine with the pasta however you choose, and serve with some grated Parmigiano Reggiano.

Two Pestos 1

While I love to cook any time of year, unfortunately, it’s a little more difficult in the throes of a central Texas summer.  The thought of turning on the oven or the stove makes me want to stick my head in the freezer.  So, while it may not always be possible to avoid the extra kitchen heat, it can be minimized.

And one of those ways is making some pesto.

Pesto originated in Genoa in the northern Italian province of Liguria.  The name comes from Italian word pestare  (Genoese: pesta) meaning “to crush; to pound”.  It is traditionally made with garlic, basil, and pine nuts blended with olive oil, Parmigiano Reggiano (Parmesan cheese), and Fiore Sardo (cheese made from sheep’s milk).

The ancient Romans ate a paste called moretum, which was made by crushing cheese, garlic and herbs together. Basil, the main ingredient of modern pesto, likely originated in India and was first domesticated there. Basil took the firmest root in the regions of Liguria, Italy and Provence, France. The Ligurians around Genoa took the dish and adapted it, using a combination of basil, crushed garlic, grated cheese, and pine nuts with a little olive oil to form pesto. The first mention of recipe for pesto as it is known today, is from the book La Cuciniera Genovese written in 1863 by Giovanni Battista Ratto.

While pesto was introduced in the US is the 1940’s, it didn’t become popular until the 1980’s.

The pestos I’m showing you today aren’t the traditional recipe that many have come to know and love.  While I’m very serious about traditional recipes, sometimes experimentation isn’t a bad thing.

Now, on to the recipes.

A few notes:

1.  Splurge and buy the freshest ingredients you can.  And that includes buying imported cheeses.  While America makes many wonderful cheeses, we aren’t too good with hard Italian cheeses.  Since pesto is essentially a raw product, you want the best.

2.  I don’t recommend using oil-packed/cured sun-dried tomatoes.  They’re usually flavored and I can’t control the amount of oil in the pesto.  Plus, somehow, they always taste cooked. Buy plain sun-dried and you won’t be sorry.

3.  You’ll no doubt notice in the instructions that I use a food processor for these recipes.  It is simply for ease in preparation.  If you feel like going all traditional, go for it.  But, it’d be a safe bet to say those tomatoes would be a bitch to beat down with a mortar and pestle.

Also, I keep the processor running through most of the prep.  This helps greatly when adding the “harder” ingredients like the garlic and nuts.  If you add them to the bowl and then turn on the processor, you won’t get a fine or consistent chop, which is what you want.

4.  When I serve these pestos, I always have some extra cheese on hand, some minced parsley (for the sun-dried tomato) and some halved cherry tomatoes (for the cilantro).  You don’t have to have these, but I thought I’d pass it along.

5.  As we all know, pesto is good on so many other things than just pasta.  Spread it on bread, use as a dip for vegetables, top grilled meats, seafood, or vegetables.

6.  Pesto will keep in the refrigerator for about a week.  I don’t recommend freezing.

1/2 c. pine nuts, roasted (350F for 3 – 5 minutes)

1/4 c. walnuts

1 tsp. red pepper flakes

1/4 c.  Romano cheese, fresh grated

1/2 c. Parmesan cheese, fresh grated

2 – 3 bunches cilantro, depending on size, large stems removed (It’s OK to have some stem. No need to pick the leaves.)

Juice of 1/2 lemon (approx. 1 1/2 tsp.)

1/4 c. olive oil, more if needed

Salt & pepper to taste

 

1.  Have your food processor running.  Drop the garlic through the feed tube and chop. Add the pine nuts and pepper flakes.

Turn off the processor, remove the lid, and add the cheeses, salt and pepper.  Turn on the processor again and let the cheese mix in.

2. Again, with the processor running, push the cilantro down the feed tube.

Continue processing until the mixture becomes a paste.  Add more oil if you want a thinner pesto.

Turn off the processor and add the cheeses, salt and pepper.  Again, process until everything is mixed.

Pour in the oil and lemon juice.  Turn off the processor and check for seasoning and consistency.  If the pesto is too thick, add a little of the soaking water  or oil and process until it becomes the consistency you like.

The most common way to serve pesto is over pasta.  So, cook your pasta of choice according to the directions.  Be sure to save some of the pasta water before you drain the pasta.

I generally like to place a serving of the pasta in a medium bowl, spoon over the amount of pesto I want, and begin to toss them together.  I’ll use some of the pasta water if I need to.

I’ll place the pasta on the plate, garnish a little, and serve.

Spinach & Mushroom Pie 4

Savory pies, or their fancier cousin, quiches, are a great way to use a combination of leftovers, pantry items, and your imagination.  Like with sweet pies, a savory pie can make you use your creativity in new and surprising ways.

Plus, it’s a good, quick meal after a long day at work.

A few tips on making savory pies:

1.  Frozen pie crusts are fine.  That’s what I used in this recipe.  I know some will think it’s cheating, or, at worst, sacrilege, but I think it works perfectly well for this recipe.

2.  Keep the pie crust frozen until just before you’re ready to fill it.  Otherwise, it will become soggy during baking.

3.  Always have whole milk and eggs on hand.  They’ll make the custard, or base, of the pie.  Don’t use 2%, 1%, or skim milk.  They won”t stand up to the heat.

4.  If you’re using a cooked filling in the pie, make sure it’s cooled off before you put it into the crust.  Otherwise, it will begin to melt the crust too early and/or cook the eggs too quickly.

5.  Cheese is always good.

6.  When you bake the pie, take it out of the oven when it has a slight wobble in the center.  Let the pie sit for 10 minutes before cutting.  This will allow the pie to settle and finish setting up in the center without overcooking the eggs,

2 tbsp. olive oil

1 c. sliced mushrooms

1 c. spinach, chopped (if you’re using baby spinach, don’t worry about chopping)

1 c. whole milk or half-and-half

3 eggs

1/2 tsp. nutmeg

1 tsp. rosemary, chopped

1/2 tsp. salt

1/2 tsp. black pepper

1 c. shredded Gruyère cheese

1 ea. frozen 9-inch pie shell

 

1.  Position a rack in the center of the oven and preheat  to 425F.  Prepare a baking sheet by lining it with foil (this is to transport the pie to and from the oven).  Tear a long piece of foil in half lengthwise; fold each piece in half again lengthwise.  You will use these to wrap the edges of the crust before you add the filling. (The foil will keep the edges of the crust from burning in the oven.)

2.  Heat the oil in a large skillet over rmedium-high heat.  Add the mushrooms, a pinch of salt, and saute until they soften, about 5 – 7 minutes.

Add the spinach and cook until it just begins to wilt.

Remove the skillet from the heat and let the mixture cool. (To cool the filling faster, take it out of the pan and  spread it onto a plate.)

3.  In a large measuring cup or medium bowl, mix together the eggs, milk or half-and-half, rosemary, nutmeg, and salt & pepper.  Set aside.  This is the custard mixture.

4.  Take the pie crust out of the freezer and place it on the baking sheet.  Take your two reserved pieces of foil and wrap them around the outer edge of the pie crust.  There will be some overlap.  Be sure the foil doesn’t go down the sides of the crust where the filling will be.

5.  Line the bottom of the crust with the grated Gruyère.

Next, spread the spinach-mushroom mixture as evenly as possible over the cheese.

Lastly, slowly over the custard to fill the pie.

6.  Place the pie in the oven and bake for 25 – 30 minutes, or until a tester comes out clean and there is a very slight wobble in the center of the pie.  Let the pie stand for about 10 minutes before cutting and serving.

Tomato Soup & Welsh Rarebit Souffles 1

“What exactly is Welsh Rarebit?” you’re probably asking yourself.

Most of us know this dish as basically cheese on toast.  Not a bad thing.

It’s actually a dish that was born of poverty in 18th Century Wales.  At that time, only the wealthiest could afford meat.  Cheese was the “meat” of the poor.  Over time, “Rarebit” became the bastardization of “rabbit”.

Most recipes that I’ve found contain some sort of alcohol, generally ale.  However, I wanted a recipe that didn’t have any alcohol.  And, I finally came across one written by Jennifer Paterson of “Two Fat Ladies” fame.  It is different than traditional Rarebit, which is generally a cheese sauce, in that this recipe is more of a souffle-style.

This won’t behave like what most would think of as a souffle.  It certainly doesn’t rise like one.  The souffle-style comes from the base  (cheese and egg yolks) folded into beaten egg whites which makes the topping a souffle effect.

Now.  To the recipes.

Now, of course, with either of these recipes, you can serve them separately with a simple salad to make a nice lunch or a light dinner.  Together, they make a rather hearty end-of-day vegetarian supper.

For the Rarebit, if you want to use other cheeses or all of one or the other, go ahead.  However, cheddar is the most traditional.  Be sure to use a sharp cheddar.  Once you add the egg whites, it will neutralize the flavor of the cheese mixture, so you want a stong-tasting cheese.  Longhorn cheddar won’t do.

With summer coming up, fresh tomatoes will be abundant.  If you want to use your fresh home-grown tomatoes, by all means, do.  Use the equivalent amount to fresh tomatoes.  Depending on how “rustic” you like your soup, you can peel and seed your fresh tomatoes before using them in the soup if you prefer.  It’s up to you.

As for canned, I use Muir Glen Fire Roasted.  If you want to use your fresh tomatoes but would like the roasted flavor, you can either roast your tomatoes on the grill or slow-roast in your oven.

1.  In a large saucepan over medium-high heat, saute the onions and garlic until the onions begin to soften, about 5 minutes.

2.  Add the red pepper flakes, if using, and cook another minute.

3.  Add the tomato paste and, stirring frequently, cook until the tomato paste begins to take on a rust-colored appearance (this indicates the sugars in the tomato paste are caramelizing).

4.  Add the tomatoes, rosemary, vinegar, broth, sugar, salt & pepper.  Stir until the soup is well mixed.  Cover and bring to a boil.  Once the soup has come to a boil, uncover, lower the heat to medium-low, and cook for 30 minutes.  Stir occasionally.

5.  After the first 30 minutes of cooking, remove the soup from the heat and remove the rosemary stem.  Let the soup cool slightly.

6.  With either a stand blender (in batches) or a stick blender, puree the soup.  Make it as smooth or as texture as you like.  If you want a super-smooth soup, then pour the pureed soup through a strainer.  Taste for seasoning.

7.  Put the soup back on the stove to reheat over medium heat and just bring back to a boil.  Turn off the heat and add the basil.  Set the soup aside and let the basil “steep”.

Meanwhile, while the soup is cooking, make the Rarebit.

1/4 tsp. cream of tartar

1.  In a large bowl mix the cheese with the egg yolks, Worcestershire, dry mustard, cayenne, paprika, salt & pepper.  Set aside.

2.  Preheat the oven to 450F.  Place the bread on a baking sheet lines with foil and parchment paper and toast the bread until it is lightly toasted on both sides.  Set aside.

3.  In a mixer, beat the egg whites with the cream of tartar until the whites reach stiff peak stage.

4.  Take 1/4 of the egg whites and mix them into the cheese mixture to lighten it up a bit.

5.  Take the remaining egg whites, 1/3 at a time, and fold them into the cheese mixture.  Don’t worry about making a homogenous mixture.  You just want to get a good mix with the cheese.

6.  Divide the mixture evenly between the pieces of bread (there will be quite a lot).

Place the baking sheet in the oven and bake for 10  – 12 minutes or until the souffles are brown and have risen slightly.

Oven Roasted Tomatoes with Orecchiette 4

The humble tomato. One of our favorite  nightshade family fruits used as a vegetable. It’s hard to imagine now how it was once considered at best a trash food, and, at worst, poisonous.

The exact date of domestication is unknown; however,  by 500 BCE, it was already being cultivated in southern Mexico. The large, lumpy tomato, a mutation from a smoother, smaller fruit, originated in Mesoamerica, and may be the direct ancestor of some modern cultivated tomatoes.

There is some specualtion as to whether it was Christopher Columbus or Hernán Cortés was the first European to transfer the small yellow tomato to Europe. The earliest discussion of the tomato in European literature appeared  in 1544 by Pietro Andrea Mattioli, an Italian physician and botanist, who suggested that a new type of “eggplant” had been brought to Italy that was blood red or golden color when mature and could be eaten like an eggplant—cooked and seasoned with salt, black pepper, and oil. However it wasn’t until ten years later that tomatoes were named in print by Mattioli as pomi d’oro, or “golden apple”.

The earliest discovered cookbook with tomato recipes was published in Naples in 1692, though the author had apparently obtained these recipes from Spanish sources. In northern areas of Italy, however, the fruit was used solely as a tabletop decoration before it was incorporated into the local cuisine in the late 17th or early 18th century.

The first recorded history of tomatoes in Italy dates back to October 31, 1548 when the house steward of the de’ Medici family wrote to the Medici private secretary informing him that the basket of tomatoes sent from the family’s Florentine estate at Torre del Gallo “had arrived safely.” Tomatoes were grown mainly as ornamentals early on after their arrival in Italy. The Florentine aristocrat Giovanvettorio Soderini wrote how they “were to be sought only for their beauty” and were grown only in gardens or flower beds. The tomato’s ability to mutate and create new and different varieties helped contribute to its success and spread throughout Italy. However, even in areas where the climate supported growing tomatoes, their proximity of growing to the ground suggested low status. They were not adopted as a staple of the peasant population because they were not as filling as other fruits already available. Additionally, both toxic and inedible varieties discouraged many people from attempting to consume or prepare them.

Tomatoes were not grown in England until the 1590s. One of the earliest cultivators was John Gerard, a barber-surgeon. Gerard’sHerbal, published in 1597, and largely plagiarized from continental sources, is also one of the earliest discussions of the tomato in England. Gerard knew the tomato was eaten in Spain and Italy.  Nonetheless, he believed it was poisonous.  Gerard’s views were influential, and the tomato was considered unfit for eating (though not necessarily poisonous) for many years in Britain and its North American colonies. By the mid-18th century, tomatoes were widely eaten in Britain, and before the end of that century, the Encyclopædia Britannica stated the tomato was “in daily use” in soups, broths, and as a garnish.

The tomato was introduced to cultivation in the Middle East/Asia by John Barker, British consul in Aleppo circa 1799 to 1825. Nineteenth century descriptions of its consumption are uniformly as an ingredient in a cooked dish. In 1881, it is described as only eaten in the region “within the last forty years”.

The tomato entered Iran through two separate routes; one was through Turkey and Armenia, and the other was through the Qajar royal family’s frequent travels to France. The early name used for tomato in Iran was Armani badenjan (Armenian eggplant). Currently, the name used for tomato in Iran is gojeh farangi [French plum].

The earliest reference to tomatoes being grown in British North America is from 1710, when herbalist William Salmon reported seeing them in what is today South Carolina, where they were introduced from the Caribbean. By the mid-18th century, they were cultivated on some Carolina plantations, and likely in other parts of the Southeast as well. Possibly, some people continued to think tomatoes were poisonous at this time; and in general, they were grown more as ornamental plants than as food. Thomas Jefferson, who ate tomatoes in Paris, sent some seeds back to America.

Alexander W. Livingston was the first person who succeeded in upgrading the wild tomato, developing different breeds and stabilizing the plants. In the 1937 yearbook of the Federal Department of Agriculture, it was declared that “half of the major varieties were a result of the abilities of the Livingstons to evaluate and perpetuate superior material in the tomato”. Livingston’s first breed of tomato, the Paragon, was introduced in 1870. In 1875, he introduced the Acme, which was said to be involved in the parentage of most of the tomatoes introduced by him and his competitors for the next twenty-five years.

When Alexander W. Livingston had begun his attempts to develop the tomato as a commercial crop, his aim had been to grow tomatoes smooth in contour, uniform in size and having better flavor.  After five years, the fruit became fleshier and larger. In 1870, Alexander introduced the Paragon and tomato culture began at once to be a great enterprise of the county. Today, the crop is grown in every state in the Union. He eventually developed over seventeen different varieties of the tomato plant.

 

And… thus  the birth of the  homoginization of the tomato.

Luckily, that’s changing rapidly as heirloom varieties are now becoming more readily avilable.

This recipe is one of my favorites not only because of its ease of preparation and the fact that it’s delicious, but because of its long cooking time.

Yes. You read that right.

This is a recipe that requires a very long cooking time.  At least 6 hours.

I know what some of you are thinking. What?! That’s insane! What do you mean by this being a good thing?

Trust me.  It is.  Because I can put this in the oven on a low, slow cook, walk away, and forget about it for a few hours. I can get on with my day.

Now, admittedly, some of you don’t feel comfortable leaving your oven on all day without someone at home to monitor it.  And that’s fine.  You can certainly roast the tomatoes over a weekend day and save them until later in the week for a quick weeknight supper.

 

Now, to the recipe:

A few notes:

a) I generally use Roma tomatoes in this recipe.  This particular variety of tomato is meant to be cooked because of it’s meatiness. (It’s typically used in sauces and pastes.) They’re also available year-round.

b) Feel free to use whatever spices and herbs you like for this.  However, due to the long cooking time, I recommend using dried herbs.  If you’d like to use fresh herbs, mix them into the roasted tomatoes and pasta at the end.

c) Feel free to use what ever pasta you like.  I like to use orecchiette (meaning “little ears” in Italian) because the shape of the pasta holds so much of the sauce that comes from roasting the tomatoes.  However, if you would like to use another pasta, I would recommend using a shaped pasta as opposed to a straight pasta like spaghetti or pappardelle.

d) You can roast the tomatoes in advance and keep them in the refrigerator for 4 – 5 days.  Just heat them up slowly as you cook the pasta, then, mix them together when the pasta is done.

e) If you like, you can mix in a little protein to the tomatoes and pasta just before you serve.  Spicy Italian sausage works well.

5 – 6 lb. Roma tomatoes, seeded, stem end cut out

1/2 c. olive oil

1 lb. Orecchiette, or other shaped pasta

Grated Romano cheese

 

 

1.  Turn on your oven to 200F – 250F (depends on how fast you want to cook your tomatoes). Take a very large baking dish (mine is 12″ x 18″), and, if you like, give it a quick spritz with some non-stick spray.

2.  Cut the blossom end off and cut the  tomatoes in half along their equator. Give each of the halves a squeeze and use your fingers to remove as many of the seeds as possible.

Take the discarded seeds and use them in the compost pile or save for seeds for the garden.

3.  Place the cleaned halves in the baking dish.  Try to make sure you have a single layer.

4.  Drizzle the olive oil over the tomatoes.

Sprinkle over the seasonings.  Again, use as much or as little of what you like.  Carefully toss the tomatoes to completely coat them in the oil and seasonings.

5.  Now, bake the tomatoes for at least 6 hours.  You can go as long as you like, depending on your oven temperature and how roasted you want your tomatoes.

I generally bake my tomatoes at 225F for about 8-10 hours.  I like them pretty well reduced.

With the amount of tomatoes you are roasting, unless they are very dry (and some may be, especially in the winter), you will end up with a lot of juices in the pan.  Embrace that.  Makes a great natural sauce for the pasta along with the tomatoes.

6.  After the tomatoes have roasted for at least 6 hours, check them.  Stir if you like. At this point, you can take the tomatoes out of the oven or continue to roast further.

7.  After the tomatoes are out of the oven, cook your chosen pasta according to the package directions until al dente.  Drain and put back into the cooking pot.

8.  Meanwhile, cut or chop the tomatoes.  I like doing this with a pair of kitchen shears.  It’s just easier and a whole lot less messy.

9.  Pour the tomatoes and juice into the cooking pot with the pasta and mix together.

If you like, sprinkle on some Romano Cheese.  I find it works well with the roasted flavor of the tomatoes.

Posole Verde 0

When my husband, Steve, was a vegetarian, I had to come up with all sorts of variations on my favorite dishes to accommodate his dietary needs. (He has since come back to the dark side.)  Since one of my favorites has always been Posole, I wanted to come up with a variation that we would both enjoy. (For more on posole, see my Feb. 28, 2012 post “Posole (…or Pozole)”.)

Traditional posole is always made with meat.  Usually pork.  However, my recipe is a quick, easy, and most importantly, tasty recipe that will make vegetarian and non-vegetarians alike very happy. And full.

Now, to the recipe.

a) I realize I’m wandering dangerously close into Sandra Lee territory with all the canned ingredients.  But, trust me, they work in this dish.  However, if you’d like to use all fresh, be my guest.

b) If you omit the cheese as a garnish and cook the hominy from dried, you can make this dish vegan.  If you’d like to add some protein, use chicken broth and add some cooked chicken at the end.

2 tbsp. vegetable or canola oil

1 med. white onion, diced

3 cl. garlic, minced

1 small can (approximately 1/2 c.) salsa verde

2 small cans (approxomately 1/2 c.) chopped green chiles, hot, mild, or a combination

2 cans hominy, drained

1 tsp. dried Mexican oregano

1/2 tsp. ground cumin

1 tsp. Kosher salt

1/2 tsp. ground black pepper

4 c. vegetable broth

few dashes green Tabasco

Juice of 1 lime, or to taste

 

For garnish:

chopped avocado

diced queso fresco

chopped cilantro

fresh limes, quartered (because I like more lime than most normal people)

1.  Heat the oil in a large saucepan over medium high heat.  Add the onions and garlic.  Saute until the onion is soft, about 5 minutes.

2.  Add the salsa verde and the chiles.  Saute another 2 -3 minutes.  Add the oregano, cumin, salt & pepper.  Saute another 2 – 3 minutes.

3.  Add the hominy and saute for another 2 – 3 minutes.

4.  Add the vegetable broth and a few dashes of the green Tabasco.

Cover the saucepan and bring the broth to a boil.  Uncover, lower the heat to medium low, and cook for 30 – 45 minutes.  The soup will thicken slightly as it cooks.

Stir frequently.  Taste for seasoning after the first 30 minutes.

5.  After the initial cooking time, add the lime juice and cook another 5 minutes.  Taste the soup for seasoning.

6.  Serve the posole with queso fresco, chopped cilantro, chopped avocado, and more lime.  Have heated corn tortillas on the side.

Cannellini Bean Soup 1

In the final throws of winter in Central Texas, my mind continues to turn to heartier fare.  Sometimes, beans sound delicious.

Admittedly, beans are not a food I eat often.  I do like them, but it’s not a food that immediately springs to mind when I’m deciding what to make for dinner.  They should, though.  Beans are almost the perfect food.  They have high amounts of fiber and soluble fiber. (One cup of cooked beans providing between nine and 13 grams of fiber.)  Soluble fiber can help lower blood cholesterol. Beans are also high in protein, complex carbohydrates, folate, and iron.

Beans are one of the longest-cultivated plants. Broad beans (fava beans) were gathered in Afghanistan and the Himalayan foothills. They’ve been grown in Thailand since the early seventh millennium BCE.  They were buried with the dead in ancient Egypt. In the second millennium BC did cultivated, large-seeded broad beans appear in the Aegean, Iberia and transalpine Europe. In the Iliad (late-8th century) is a passing mention of beans and chickpeas cast on the threshing floor.

Beans were an important source of protein throughout Old and New World history, and still are today.

The oldest-known domesticated beans in the Americas were found in Guitarrero Cave, an archaeological site in Peru, and dated to around the second millennium BCE.

Most of the kinds commonly eaten fresh or dried, those of the genus Phaseolus, come originally from the Americas, being first seen by a European when Christopher Columbus, during his exploration, of what may have been the Bahamas, found them growing in fields. Five kinds of Phaseolus beans were domesticated by pre-Columbian peoples: common beans (Phaseolus vulgaris) grown from Chile to the northern part of what is now the United States, and lima and sieva beans (Phaseolus lunatus), as well as the less widely distributed teparies (Phaseolus acutifolius), scarlet runner beans (Phaseolus coccineus) and polyanthus beans (Phaseolus polyanthus). One especially famous use of beans by pre-Columbian people as far north as the Atlantic seaboard is the “Three Sisters” method of companion plant cultivation:

In the New World, many tribes would grow beans together with maize (corn), and squash. The corn would not be planted in rows as is done by European agriculture, but in a checkerboard/hex fashion across a field, in separate patches of one to six stalks each.
Beans would be planted around the base of the developing stalks, and would vine their way up as the stalks grew. All American beans at that time were vine plants, “bush beans” having been bred only more recently. The cornstalks would work as a trellis for the beans, and the beans would provide much-needed nitrogen for the corn.
Squash would be planted in the spaces between the patches of corn in the field. They would be provided slight shelter from the sun by the corn, would shade the soil and reduce evaporation, and would deter many animals from attacking the corn and beans because their coarse, hairy vines and broad, stiff leaves are difficult or uncomfortable for animals such as deer and raccoons to walk through, crows to land on, etc.

Dry beans come from both Old World varieties of broad beans (fava beans) and New World varieties (kidney, black, cranberry, pinto, navy/haricot).

Beans are a heliotropic plant, meaning that the leaves tilt throughout the day to face the sun. At nighttime, they go into a folded “sleep” position.

The bean varieties I eat most often are pinto and black.  Hell, I’m in Texas.  It’s almost a requirement.  I’ve also enjoyed garbanzo, fava, navy, red kidney, and, my personal favorite, cannellini.

I’m not sure what it is about cannellini beans that I enjoy so much.  Perhaps it’s the slight sweetness to them.  They’re also very versatile. Like pretty much all beans.

Now, to the recipe.

The recipe is presented as vegetarian.  I generally keep it that way.  However, if you would like to make the recipe vegan, cook the beans from dried and omit the Parmesan rinds.  If you would like to add some meat to the recipe, a little leftover chicken or diced pork would work well.

I do used canned beans in this recipe.  Beans are a foodstuff that cans well.  It’s also quick, convenient, and cheap.

This is most definitely a dish one can make after a day at work.  It also freezes well.

As for the Parmesan rinds: if you have a good cheese section in your grocery store or a specialty cheese shop that cuts Parmesan down from the wheel, ask them to save you some of the rinds.  Sometimes you’ll be charged a nominal amount, sometimes you’ll get them for free.  Keep them in the freezer.  They add a lot of flavor ro many soups and stews without imparting too much extra fat or cheese.

2 cans cannellini beans, drained

1 med. carrot, diced

1 stalk celery, diced

1/2 c. yellow onion, minced

4 cl. garlic, minced

2 tbsp. olive oil

2 c. vegetable broth

1 tsp. dried sage

1/2 tsp. each salt and pepper, or to taste

Approx. 3 – 4 oz. Parmesan rinds (If they are large enough, you can leave them loose in the soup while cooking. Otherwise, wrap them in a cheesecloth for easy removal after cooking.)

1.  In a medium saucepan, heat the olive oil over medium-high heat.  Add the vegetables (the mirepoix) and the garlic and saute until the vegetables begin to soften, about 5 minutes.

2.  Add the beans, sage, salt & pepper.  Saute another 2 – 3 minutes.

3.  Add the broth and rinds.  Bring the broth to a boil, then turn the heat down to medium-low.  Cook for 30 – 45 minutes, or until the soup begins to thicken. Stir occasionally to be sure the rinds don’t stick to the bottom.

4.  When the soup is done, taste for seasoning and adjust to your liking.  Remove as many of the rinds as you can before or as you serve. (The rinds are basically inedible.)  Drizzle some olive oil over the top of the soup if you like.

I like to have a good hearty country-style bread to serve with the soup.
