Kibbeh is ubiquitous throughout the Middle East.  If you know anything at all about this dish, you know it is usually made with meat – beef, lamb, or, rarely, goat. It can be baked, fried, or eaten raw.  It is essentially a meat feast with a little wheat thrown in.

However, during Lent, many Christians throughout the world – including the Middle East – give up eating meat.  So, a vegetarian version was created (most likely in Lebanon) so they could still enjoy Kibbeh throughout Lent.

I came up with my version of this dish about 15 years ago when my husband was still a practicing vegetarian.  He’s since come back to the dark side, but I still like to make this version on occasion whenever we are having a vegan week here at Chez Ray.

 

A few notes:

  • I use pine nuts in this recipe, like I do in traditional Kibbeh.  However, if you can’t find, afford, or don’t want to use them, you can substitute slivered almonds.
  • If you want to add some additional flavoring or bulk, you can also layer in along with the filling, sliced boiled potatoes, sautéed squash, sliced tomatoes, or fried eggplant slices.
  • If you are making this for someone who is allergic to nuts, then you can use vegetables (see above) or seitan or tempeh.  However, if you decide to use either of these, be sure that either of them aren’t highly seasoned (like many commercial ones are – especially seitan).
  • I like to use fine bulghur wheat for this dish (#1 grind) because the crust holds together better with the finer grind.
  • If the crust mixture is too dry, add a little water; if it is too wet, add a little whole wheat flour.  However, make sure that you have everything well mixed before you begin adding any additional ingredients.  If you do have to add anything, adjust the seasonings accordingly.
  • A traditional accompaniment to Kibbeh is a cucumber-yogurt salad.  If you want to keep this completely vegan, then use a soy-based or coconut milk-based yogurt (however, check the label to make sure there’s no casein in the yogurt).

  1. Preheat the oven to 375F.  Either spray or oil a medium baking dish (about 7″ x 11″) and set it aside.

 

2.  Rinse the wheat in a fine mesh strainer until the water runs clear.

Then, put the wheat into a bowl and cover with 1″ of water.  Set aside and allow the wheat to soak until it is “al dente”, about 20 – 30 minutes.

Once the wheat is ready, drain it through the strainer again. (There’s no need to squeeze out all of the water; just be sure the wheat is well drained.)  Set aside.

3.  Make the filling:  Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat.  Sauté the onions until they become soft, about 5 – 7 minutes.  Stir frequently.

Place the skillet back on the heat and turn down the heat to medium and add the garlic to the onions.  Sauté for 2 – 3 minutes.  Stir frequently.

Add the pine nuts and the walnuts and cook for another 3 – 4 minutes, or until they have toasted (be sure not to burn them).  Again, stirring frequently.

Add in 1/2 teaspoon of the cinnamon, 1 teaspoon allspice, the pomegranate syrup, and salt and pepper to taste.  Cook for another 5 minutes, stirring frequently.  Take the skillet from the heat and taste for seasoning.  Allow the filling to cool slightly.

4.  Make the crust:  Take the other half of the onions and place them into a food processor along with the parsley, and the wheat.

Pulse a few times to begin mixing the ingredients, scrape down the bowl and add the other half each of the cinnamon and allspice, and a good pinch each of salt and pepper.

Process the mixture (scraping down the sides and pulsing as needed) until it is well mixed and has almost a paste-like consistency.  It should still have some texture, but the mixture should hold together.  Taste for seasoning.

5.  Assembly: Take half of the crust mixture and spread it evenly over the bottom of the dish.

Carefully spread the top crust over the filling, smoothing it down as you go. (You may have to do this in sections.)

Eseentlially, this is ready to go into the oven. The top layer is a little thin because I used too much on the bottom layer. If that happens to you, just very carefully spread out the top as much as you can.

6.  Cut the assembled Kibbeh into serving-size squares; or, if you want to get fancy, into diamond-shaped pieces (it’s more traditional).  Press a few additional pine nuts on each piece for garnish. Spread or brush the remaining 1 tablespoon of olive oil over the top. (See above photo)

7.  Place the Kibbeh in the oven and cook until the top crust is slightly browned, about 30 minutes.  Serve hot or at room temperature.

Mujadarah مجدرة 0

In the ongoing informal series of foods from my childhood, today, I’m going to introduce you to Mujadarah.

Admittedly, this wasn’t my favorite dish growing up.  I usually picked at it or ate it with lots of salad so I could get it down.  But, as happens with most of us, my palate changed and discovered that I, even if I don’t love Mujadarah, I like it.  It must have been the lentils.

The first record of mujadara dates back to  1226, in the Iraqi cookbook Kitab al-Tabikh by al-Baghdadi. It was known as “peasant food”.  Mujaddara is the Arabic word for “pockmarked”; the lentils among the rice resemble pockmarks. Generally consisting of rice, lentils, sometimes burghul (#3 or #4 coarse grind), and, very occasionally, meat, it was served during celebrations. Without meat, it was a medieval Arab dish commonly consumed by the poor. Because of its importance in the diet, a saying in the Eastern Arab world is, “A hungry man would be willing to sell his soul for a dish of mujaddara.”

Arab Christians traditionally eat mujaddara during Lent.  The dish is also popular among Jewish communities of Middle Eastern origin, in particular those of Syrian and Egyptian backgrounds; it is sometimes nicknamed “Esau’s favourite”. Jews traditionally ate it twice a week: hot on Thursday evening, and cold on Sunday.

If the recipe looks somewhat familiar to you, I’ve made a dish similar before, Koshari.  The biggest difference is that Koshari has chick peas and pasta and is generally served with a tomato-cumin sauce.

 

A few notes:

1.  You can make this dish with white rice, brown rice, or burghul wheat. If you use burghul, be sure to use a #3 (medium coarse) or #4 (coarse) grind. If you use burghul, it will be the standard 2:1 ratio you would use for white rice.

2.  You can use either brown or green lentils.  Don’t use red.  They cook too soft for this dish.

3.  My mom uses just cinnamon as the spice (other than salt & pepper).  Play with the spices and come up with a combination you like.

4.  While some do make this dish with meat, I’ve always eaten it as a vegetarian meal.  If you want to add meat, follow the meat cooking instructions for Kidra.

Add the salt, pepper, allspice, and cumin.  Cook until the spices begin to give off a fragrance, about 1 minute.

Add the water or broth, bring to a boil, cover the saucepan, and turn down the heat to low.  Cook until the rice is done – 25 to 30 minutes for white, 45 to 50 minutes for brown.

Once the onions begin to brown, watch them more closely and stir more often; you want the onions to brown, not burn.  Cook them down as far as you like. (I prefer them to be fully caramelized.)  Depending on how dark you want the onions, it could take anywhere between 20 – 30 minutes to cook them.

When the onions are done, take them off the heat and set aside.

3.  About halfway through the rice cooking time, place the lentils in a medium saucepan, cover with water to at least 1″ above the lentils, and bring to a boil over high heat.  Cook the lentils, adding water as needed, until they are done, about 20 – 25 minutes.

4.  When the lentils and the rice are done, mix them together (I usually do this in the pot I cooked the rice in).  Mix in the onions.  Taste for seasoning.

Stuffed Grape Leaves محشي ورق عنب 3

Stuffed Grape Leaves. In Arabic, محشي ورق عنب, or, spelled phonetically, mishi waraq ‘einab.  It was another one of those dishes my sisters & I ate gleefully growing up.  When Mom would make stuffed grape leaves, it was cause for great rejoicing. Especially for Dad.

Many know the Greek word, Dolmas.  Dolma comes from the Turkish word “dolmak” meaning “to be stuffed”.  In Arabic, “mishi” means “stuffed”.  There are literally dozens of variations of stuffed grape leaves all over the Middle East, the Mediterranean, the Balkans, Central Europe, and Central Asia.

Probably the most common way to make the grape leaves is to cook them in an olive oil – lemon juice based-sauce.  However, the way I was taught to make grape leaves was the way my grandmother made them; with a tomato-based sauce.

I was talking to my mom about this one day.  She said the first time she ever ate grape leaves, the sauce was made from sour grapes.  She said it was awful.  The next time she had the dish, my dad had made it the way he preferred and the way his mother made them – with tomatoes.

I like to call it Palestinian-style.

If you would like to make this dish vegetarian/vegan, substitute an equal amount of roasted eggplant for the meat, vegetable broth for the beef broth, and add 1/4 cup tomato paste to the stuffing (this will help the filling bind together).

If you would like to use brown rice in place of the white rice, be sure to add 20 – 30 minutes to the cooking time.

1.  Take a large saucepan or stockpot and place a rack on the bottom. If you don’t have a rack, use a steamer that sits in the saucepan. (I like to use my pasta pot with the insert.)  This is done not only to keep the grape leaves off the bottom to keep them from burning but to help steam the stuffed leaves as they’re cooking.

If you are using shanks, chops, or ribs, place them on the rack or steamer.  Set aside.

2.  Carefully take the grape leaves out of the jar (take care not to rip the leaves) and rinse thoroughly.  You want to be sure that the brine is rinsed off. Usually, you will need to separate the leaves when rinsing.  I’ll also fill a large bowl with water and let the leaves soak for a few minutes, then drain.  You want the water to be as clear as possible.

Boil the rice until it is about halfway cooked (take some rice out of the water and test it; it should be slightly chewy with a very crunchy center).  Drain the rice in a colander and set aside until it is cool enough to handle.

4.  In a large bowl, mix together the meat and rice (it’s best to use your hands for this).  Add the spices and mix thoroughly.

To taste for seasoning, take a small amount of the mixture and place in a hot skillet to cook (the flavor will be closer to what the finished dish will taste like). Adjust the spices to your taste.

5.  Once you have finished mixing the filling, it’s time to stuff the leaves. Which I will explain in the following photos. (My husband took these photos across from me.  I rotated them so you could see them from my perspective. So, admittedly, they may look a little skewed. Apologies.)

The most important thing to remember is to not wrap the leaves too tight.  You want snug, but not tight.  The rice will continue to expand when the stuffed leaves are cooked.  If you wrap them too tight, they’ll burst.  Conversely, if you wrap them too loosely, they’ll fall apart.  A happy medium is preferred.

6.  As you make each roll, place it in the pot.  When you are about halfway through, crush a few of the tomatoes with your hands and lay them on the finished leaves.  Pour on some of the tomato juice. Finish stuffing the remaining leaves.   Crush the remaining tomatoes and place them on top.  Pour over the rest of the tomato juice and the beef broth.

7.  Cover the pot and bring the liquid to boil over high heat.  Lower the heat to low, keep the pot covered, and cook until the rice and meat are cooked, about 30 – 45 minutes.  You’ll need to take one out to test.

8.  When the grape leaves are cooked, place a serving on a plate, carefully pull out one of the shanks or ribs, and spoon out some of the broth to pour over the leaves on the plate.  You can also have some yogurt and pita bread on the side.

Mole Poblano 1

Once again, the weather has taken its temporary turn towards cool & comfortable here in Central Texas.  The perfect excuse to break out the mole.  Again.

I’ve made mole twice before on this blog –  Mole Verde (Oct. 9, 2012: http://www.tartqueenskitchen.com/?p=1120) and Mole Rojo (Oct. 30. 2012: http://www.tartqueenskitchen.com/?p=1170).

The mole I’m making this time is probably the best known as well as the original: Mole Poblano.

Legend has it that in the 16th Century this  dish was invented in desperation by the nuns of the Convent of Santa Rosa in Puebla de los Angeles.  They were an impoverished order expecting a visit from the Archbishop and they really had nothing to feed him.  So, they basically threw together what they had: day-old bread, chocolate, some chiles, nuts, an old turkey.  The results were, shall we say, heavenly.  Apparently, the Archbishop loved the meal. And a masterpiece was created.

For the last mole I made for you, Mole Rojo, I used exclusively chili powders.  This was to demonstrate that they could be used as a substitution for the dried chiles and makes the preparation much easier.  In this recipe, I do things the more traditional way, with dried chiles.  It takes longer, most definitely.  But, for mole purists, I hope I have redeemed myself with you.

A few notes:

1.  When using the dried chiles, make sure they are fresh-looking and pliable (a contradiction, I know).  If the chiles break apart when you try to bend them, it simply means they are too old and dried out (and possibly infested).  You want the chilies to have retained their essential oils.  That’s what gives them their flavor and aroma.

2.  The best place to find the chiles (and all the ingredients for this recipe) is at a market that caters to the Hispanic community. (Here in Austin, my favorite is El Rancho Supermercado.)  If they don’t have it, it’s pretty unlikely anyone else will.  Besides, it’s a great place to go to just explore and try new things. Plus I get to practice my limited Spanish.

3.  I used a 4-lb bone-in turkey breast for this example.  You can use leftover turkey and skip step 1.  However, be sure to use chicken or turkey broth instead of water.  Otherwise, you won’t get the flavor you’re looking for.

1.  Place the turkey and stock or water to a large stockpot and heat over medium-high heat.  Once the stock has come to a boil, turn the heat down to medium-low and simmer until the meat is cooked, about 30 – 45 minutes.  Once the turkey is done, take it from the stock and set aside until cool enough to shred.  Turn the heat off under the stock until all the other ingredients are ready.

2.  If you’re using whole chiles, remove the stems and cut the chiles open to remove the seeds.

Puree the chiles in a food processor or blender (you’ll need to do this in batches) until you make a paste.  Set aside.

3.  If you’re using the chile powders, dry roast them over high heat in a heavy skillet until they just begin to release a scent.  Stir constantly to be sure the powders don’t burn.  Pour the powder onto a plate or another flat surface and spread it out to help it cool. (Basically, skip step 2 all together.)

6.  Add the oil to the skillet.  Lightly fry the almonds and pecans.  Drain on paper towels and let cool slightly.

7.  Lightly fry the raisins until they just begin to puff.  Remove from the oil and drain on paper towels.

8.  Turn off the heat under the oil.  Add the masa and make a roux (don’t let it get too dark).  Pour the roux into a small bowl and set aside.

9.  Turn the heat back on under the stockpot with the broth to medium-high.  Add in the chile paste or powder, onion, garlic, tomatillos, tomatoes, ground nut & spice mix, raisins, tomato paste, brown sugar, cloves, cinnamon, and 1 teaspoon each salt and pepper.  Bring the mixture to a boil, lower the heat to medium-low, and cook for 45 minutes, stirring frequently.

10.  Meanwhile, shred the turkey.  Discard any bone, skin, and gristle.  Set the turkey aside.

11.  After 45 minutes, remove the stockpot from the heat and let cool slightly.

Puree the mole with an immersion blender or in a blender or food processor.  If you want a super-smooth mole, after you’ve pureed it, you can pass it through a strainer.

12.  Put the mole back on the heat and add the masa roux and the chocolate.

Cook for 5 minutes.  Taste for seasoning.  Add the turkey and cook for another 15 minutes, stirring frequently.

13.  Serve the mole with rice and corn tortillas.  Sprinkle with sesame seeds for garnish.

Cajeta Cheesecake 1

I love cheesecake. It has everything I enjoy in a dessert: rich, sweet, and decadent (if you do it right).  Therein lies the beauty of cheesecake – you don’t need much to be satisfed.

Cheesecakes can be sweet or savory.  Chocolate, Vanilla, Citrus, or Nut.  Blue Cheese, Crab, Sun-Dried Tomato, Chipotle.

They can be baked or no-bake.  With or without a crust.  Serve it with a sauce, fruit, or by itself.

As I have said of a few other foods (chicken, pasta), cheesecake is one of the great blank cavasses of the culinary world.

The first “cheese cake” may have been created on the Greek island of Samos. Physical anthropologists excavated cheese molds from circa 2,000 BCE.  In Greece, cheesecake was considered to be a good source of energy, and there is evidence that it was served to athletes during the first Olympic games in 776 BCE. Greek brides and grooms were also known to use cheesecake as a wedding cake. The simple ingredients of flour, wheat, honey and cheese were formed into a cake and baked.

The writer Athenaeus is credited for writing the first Greek cheesecake recipe in 230 A.D. (Greeks had been serving cheesecake for over 2,000 years but this is the oldest known surviving recipe.) It was also pretty basic mix the pounded cheese in a brass pan with honey and spring wheat flour – heat the cheese cake “in one mass” – allow to cool then serve.

When the Romans conquered Greece, the cheesecake recipe was one of the spoils of war. They modified it by adding crushed cheese and eggs. These ingredients were baked under a hot brick and it was served warm. Occasionally, the Romans would put the cheese filling in a pastry. The Romans called their cheese cake “libuma” and they served it on special occasions. Marcus Cato, a Roman politician in the first century BCE, is credited as recording the oldest known Roman cheesecake recipe.

As the Romans expanded their empire further into Europe, their cheesecake recipes came with them.  Later, Great Britain and Eastern Europe began experimenting with ways to put their own unique spin on cheesecake. In each country of Europe, the recipes started taking on different cultural shapes, using ingredients native to each region. In 1545, the first  English cookbook was printed. It described the cheesecake as a flour-based sweet food. Even Henry VIII’s chef did his part to shape the cheesecake recipe. His chef cut up cheese into very small pieces and soaked those pieces in milk for three hours. Then, he strained the mixture and added eggs, butter and sugar.

It was not until the 18th century, however, that cheesecake would start to look like something we recognize in the United States today. Around this time, Europeans began to use beaten eggs instead of yeast to make their breads and cakes rise. Removing the overpowering yeast flavor made cheesecake taste more like a dessert. When Europeans immigrated to America, some brought their cheesecake recipes along.

Cream cheese was an American addition to the cake, and it has since become a staple ingredient in the United States. In 1872, a New York dairy farmer was attempting to replicate the French cheese Neufchatel. Instead, he accidentally discovered a process which resulted in the creation of cream cheese. Three years later, cream cheese was packaged in foil and distributed to local stores under the Philadelphia Cream Cheese brand. The Philadelphia Cream Cheese brand was purchased in 1903 by the Phoenix Cheese Company, and then it was purchased in 1928 by the Kraft Cheese Company. Kraft continues to make the same Philadelphia Cream Cheese that we are  familiar with today.

Of course, no story of cheesecake is complete without delving into the origins of the New York style cheesecake. The Classic New York style cheesecake is served with just the cake – no fruit, chocolate or caramel is served on the top or on the side. This famously smooth-tasting cake gets its signature flavor from extra egg yolks in the cream cheese cake mix.

By the 1900s, New Yorkers were in love with this dessert. Virtually every restaurant had its own version of cheesecake on their menu. New Yorkers have vied for bragging rights for having the original recipe ever since. Even though he is best known for his signature sandwiches, Arnold Reuben (1883-1970) is generally credited for creating the New York Style cheesecake. Reuben was born in Germany and he came to America when he was young. The story goes that Reuben was invited to a dinner party where the hostess served a cheese pie. Allegedly, he was so intrigued by this dish that he experimented with the recipe until he came up with the beloved NY Style cheesecake.

New York is not the only place in America that puts its own spin on cheesecakes. In Chicago, sour cream is added to the recipe to keep it creamy. Meanwhile, Philadelphia cheesecake is known for being lighter and creamier than New York style cheesecake and it can be served with fruit or chocolate toppings. In St. Louis, they enjoy a gooey butter cake, which has an additional layer of cake topping on the cheesecake filling.

Each region of the world also has its own take on the best way to make the dessert. Italians use ricotta cheese, while the Greeks use mizithra or feta. Germans prefer cottage cheese, while the Japanese use a combination of cornstarch and egg whites. There are specialty cheesecakes that include blue cheese, seafood, spicy chilies and even tofu! In spite of all the variations, the popular dessert’s main ingredients – cheese, wheat and a sweetener –remain the same.

No matter how you slice it, cheesecake is truly a dessert that has stood the test of time. From its earliest recorded beginnings on Samos over 4,000 years ago to its current iconic status around the world this creamy cake remains a favorite for sweet tooths of all ages.

History lesson over, here are a few tips for making a successful cheesecake.

  • Make sure you have read the recipe completely before starting.  Have all the ingredeints prepped and measured.
  • Make sure your dairy – eggs, cream cheese, etc. – are at room temperature.  This will ensure there that the ingredients will mix evenly.
  • Use the paddle attachment, not the whip, when mixing the ingredients.  Be sure to scrape down the sides and bottom of the mixing bowl as you add ingredients.  This will ensure even mixing.
  • Beat the cream cheese until it is smooth.  Make sure it doesn’t have any lumps.
  • Add the eggs one at a time.  Mix thoroughly after each one.
  • Preheat your oven for at least 15 minutes at 350F.  Be sure the rack is in the center of the oven.
  • Take the cheesecake from the oven when it still has a slight jiggle in the center.  If the center is hard when you take the cheesecake from the oven, it’s overcooked.

 

Troubleshooting:

  • To prevent cracking, be sure all the ingredients at room temperature.  As stated above, add the eggs one at a time, mixing thoroughly after each one is added.
  • To prevent a grainy texture, be sure the dairy products are at room temperature.  Slowly add the sugar, mixing thoroughly and making sure the sugar is dissolved.
  • Be sure to scrape the sids of the bowl to be sure there are no lumps. And, again, making sure the ingredients are thoroughly mixed.
Obviously, making sure the ingredeints are mixed is important.

Now to the recipe.

To begin with, in this example, I’m using bottled cajeta.  If you want to use homemeade cajeta (and I have), my blog post from Jan. 29, 2012, will teach you how to do that.  Also, just to let you know, the bottled cajeta will set up more quickly than the homemade when it’s spread over the cold cheesecake.

Also, instead of graham crackers, I’m using “Maria” (Goya ® ) cookies.  I like to use them because they are less sweet and don’t compete with the cheesecake. (If you live in a town with a large Hispanic population, Maria cookies will be readily available at most groceries.) However, you can use graham crackers if you like.

 

The ingredients

 

4 pkg. cream cheese, room temperature

3 lg. eggs, room temperature

2 tsp. vanilla extract (preferably Mexican)

1 c. cajeta

1 tsp. canela (cinnamon, ground), optional

 

1 pkg. Maria cookies or graham crackers, ground

1/2 c. unsalted butter, melted

2 tbsp. brown sugar

 

1/2 c. cajeta

1/2 c. toasted chopped pecans

 

1.  Make sure your rack is in the center of the oven and preheat to 350F.  Wrap the outside of a 8- or 9-inch spingform pan in a double layer of heavy duty foil. Cut a piece of parchment paper to fit in the bottom of the pan.

2.  In a small bowl, mix together the cookies or graham crackers, butter, and sugar.  Press the mixture into the bottom and halfway up the sides. (Try to make the thickness of the crust as even as possible.)

3.  Place the pan in a baking dish large enough for the pan to sit flat in the bottom.  Fill the pan with enough water to come halfway up the sides of the springform.  Set aside.  (The foil prevents the water from seeping into the bottom of the pan and making the crust soggy.)

 4.  In a mixer using the flat beater, beat the cream cheese until smooth.

Add the vanilla and canela (if using).  Mix well.  Add the cajeta and, again, mix well.  Be sure to scrape down the sides and bottom of the bowl so the batter is evenly mixed.

5.  Pour the batter into the prepared springform pan.

Bake for 45 – 60 minutes.  If you have a hotspot in your oven, rotate the baking dish about halfway through the cooking time.

6.  After the initial 45 minute cooking time, check the doneness of the cheesecake. Gently shake the pan.  The center of the cake should have a slight wobble.  If the center seems almost liquid, let the cheesecake continue to cook.  At 1 hour, check again.  If the center is still too liquid, continue baking, checking every 5 minutes.  Take care not to overbake.  If the center of the cheesecake is solid when you take it out, then the cake is overcooked.

Take the cheesecake out of the waterbath and allow to cool on a rack.

Once it is cooled, remove the foil and discard or toss in the recycling bin.  Wrap the cheesecake (still in the springform) thoroughly in plastic wrap and place in the refrigerator for at least 3 hours to set.

7.  When you are ready to serve, run the blunt edge of a knife (a butter knife is ideal) between the crust and sleeve of the springform.  Carefully unlatch the springform sleeve and release the cake.

At this point you can leave the cake on the base of the springform, or, if you’re feeling confident, slide the knife between the cake and the base to help release it.  (I prefer to leave it on the base and put it in a cake holder. I’m too afraid I’d drop it otherise.)

After you’ve released the cake, spread the reamaining 1/2 cup cajeta over the top and sprinkle over the toasted pecans.

Of course, be sure to remove the parchement paper from the piece of cheesecake before you serve.

Be sure to carefully wrap or cover any leftover cheesecake and refrigerate.

 

I almost forgot…  Cheesecake can be frozen. Just be sure to wrap  it (completely cooled) tightly in plastic wrap and again in foil.  It will keep for 3 months in the freezer (be sure to date it).  Let it defrost in the refrigerator for 24 hours before serving.

Kibbeh – Arabic Comfort Food 1

For my next blog post, I decided to make a dish that is near and dear to my heart; one of my ultimate comfort foods – Kibbeh.  My sisters and I grew up eating this dish.  Rather ravenously, I might add.   It’s part of our heritage.  Putting it together was a collaborative effort for our parents.  Mom always made the filling, Dad put it together – whether as little footalls for the fryer or in the baking dish for the oven.  It was always a much appreciated treat.

Kibbeh (كبة‎) is a popular and much-loved dish throughout the Middle East.   It is generally made with cracked wheat (burghul), spices, minced onion and ground  meat, gnerally beef, lamb, or goat, or a combination.

It can be shaped into stuffed croquetes (basically little footballs) and deep fried for mezze or made into layers and baked for a main dish. Some folks also eat raw kibbeh. Like Arabic Steak Tartare, minus the quail’s egg and capers.

In Israel, Kubbeh matfuniya and kubbeh hamusta are staples of Iraqi-Jewish cooking. Kubbeh soup, served in many oriental grill restaurants in Israel, is described as a “rich broth with meat-stuffed dumplings and vegetables”.

A Syrian soup known as kibbeh kishk consists of  stuffed kibbeh in a yogurt and butter broth with stewed cabbage leaves.

Fried, torpedo-shaped kibbehs have become popular in Haiti, Dominican Republic and South America – where they are known as quipe or quibbe – after they were introduced by Lebanese, Syrian, and Palestinian immigrants in the early 20th Century.

Now, on to the recipe.

I make this with a combination of beef and lamb.  You can use all of one or the other if you like.  Goat is also very popular (in the Middle East, anyway) in Kibbeh as well.

As I stated in my Hummous post (3/19/12), I’m pretty much a traditionalist when it comes to my Middle Eastern food.  The one thing I have in the traditional recipe I’ve changed is the amount of onion I use.  Most recipes can call for up to 4 onions.  I use 1 medium-sized one.  Otherwise, it’s pretty authentic.

 

The ingredients

Pine Nuts. These are not inexpensive. They can go for upwards of $20 per pound depending on where you shop. If you decide you don’t want to go to the expense, slivered almonds are a good substitute.

2 tbsp. olive oil

1 medium onion, minced

1 1/2 lbs. ground lamb or beef (use 90/10 ground)

1/2 c. pine nuts or slivered almonds

1/2 tsp. salt, or to taste

1/2 tsp. black pepper, or to taste

1/2 tsp. ground allspice, or to taste

1/4 tsp. ground cinnamon, or to taste

2 lbs. ground lamb or beef (use 90/10 ground beef)

2 cups cracked wheat (burghul)

In this recipe, I call for clarified butter.  I don’t use much, but it’s a necessary traditional flavor component.

A note on clarified butter:  I always like to have it on hand.  It has a much higher smoke point than regular butter (450F vs 350F) so it doesn’t burn as quickly.  Plus, it’s delicious. There are some chefs who deep-fry in clarified butter.  You can buy it off the shelf in Indian and Middle Eastern Groceries (Ghee and Samneh, respectively).  When buying, make sure the container indicates that the clarified butter was made with milk.  If it says “vegetable” anywhere on the container, it’s essentially margarine.

However, clarified butter is very easy to make at home.  It keeps for several months and tastes a whole lot better.

Basically, clarified butter is butter where the milk solids have been removed.  It can be made with either salted or unsalted butter. (I prefer to use unsalted. I can control the amount of salt in my recipes.)  It’s always best to use European style butter.  It has a lower water content and a higher butterfat content.  Not only will it taste better, you’ll end up with a higher yield.

To make clarified butter, slowly melt the butter in a heavy-bottomed saucepan. (I usually do 2 pounds at a time. I recommend doing at least 1 pound.)

Once the butter has melted, take it off the heat and, with a large spoon,  carefully begin skimming the milk fat off the surface.

I generally discard the milk solids, but some people do use them for other things.  Like spreading on toast or pancakes.  It’s certainly up to you.

Carefully pour the butter into a storage container or into a measuring cup.  Leave any residual milk solids and water in the saucepan.

About 3 cups clarified butter is my yield from 2 pounds of butter.

Now, time for the Kibbeh.

1.  Make the Kibbeh Filling:  In a large skillet,  heat the butter and olive oil.  Add the onion and saute until it begins to soften, about 3 – 5 minutes.  Add the meat (in this illustration I used lamb) and cook until it is no longer pink.  Add the pine nuts or almonds and cook another 2 – 3 minutes.  Add the spices and mix thoroughly.  Cook another 3 – 5 minutes.  Taste for seasoning. Remove the skillet from the heat and allow the filling to begin cooling. (There may be some extra fat in the skillet. If there is, go ahead and drain it off.)

2.  Make the Raw Kibbeh: Put the bulghur in a fine-meshed strainer and rinse it off under cold running water.  Do this until the water runs clear.  Let it drain.

Put the bulghur in a medium bowl and cover with water.  Let the bulghur soak until it begins to soften; about 20 – 30 minutes.  Drain in a fine sieve, pressing out as much of the water as possible, and set aside.

3.  Take the meat and put into a large bowl. (In this illustration, I used beef for the Raw Kibbeh.).  Add the bulghur.

Now, time to use your hands.  Dig in and mix the ingredients together.  You want them to be thoroughly mixed.  Add the salt, pepper, cinnamon, and allspice.  Mix until the spices are well incorporated.

Now, you need to taste for seasoning.  For me, the best way to taste for seasoning is to take a small amount of the mixture and give it a quick fry on the stove.  That way, I’ll get a better idea of how the finished dish will taste once it’s been completely cooked. Plus,  I won’t be eating raw ground beef.

Heat a small skillet over medium-high heat.  Add a little of the clarified butter.  Take a small amount of the mixture and form it into a roughly quarter-sized patty.  Once the butter is hot, add the patty to the skillet and cook.  It should take about 2 – 3 minutes.  Take the patty out of the skillet, allow it to cool for a minute, then taste.

Or, you could be like my mom or my Arab aunties and just know by smell when the seasoning is right.  I’ve not ever been able to master that skill.

4.  Once you’re happy with the raw kibbeh, prepare a baking dish.  (In this illustration, I used a 12″ x 18″ dish, and it was a little large.  Use something closer to an 11″ x 15″.) Give it a quick spritz with non-stick spray or grease it with butter or olive oil.

Take half of the raw kibbeh and spread it over the bottom as evenly as you can.  It’ll take some doing, but you’ll get there.  If you wet or grease your hands, it’ll help make the process a little easier.

6.  Time to put the top layer on.  Because of the filling, you won’t be able to spread the top layer the same way as the bottom.  So, a different method is needed.

Take small amounts of the raw Kibbeh and flatten them out into thin pieces and lay each piece on top of the Kibbeh filling.

Be sure to fill in any little gaps as needed.  I know that it will seem like you’ll not have enough for the top layer; but, if you persevere, you will.

7.  Once you have finished completing the top layer, cut through the layers in diamond or square shapes approximately 2 inches each.  This will help with even baking and make cutting the finished Kibbeh easier.

If you like, take some extra pine nuts or almonds and press one into the center of each diamond or square.  Drizzle a little clarified butter or olive oil over the top.

8.  Put the Kibbeh in the oven and bake for 35 – 40 minutes, or until it is well-browned.  If you like, turn on the broiler for about 3 – 5 minutes after the initial cooking time to make the Kibbeh golden brown.

Let the Kibbeh sit for about 10 minutes before serving.

 

9.  It’s a good idea to serve this dish with a bit of yogurt on the side.  It will help cut the richness of the dish.

However, I prefer to make a quick salad with the yogurt.  I’ve based this on a recipe very similar that Mom always made.

The salad ingredients.

1 cucumber (If you can go with Hothouse [English] or Persian. If you use standard cucumbers, peel and remove the seeds)

1/4 c. fresh mint, chopped

3/4 c. plain yogurt (I like to use full fat Greek yogurt)

Salt & black pepper to taste

 

Cut the cucumber into whatever size pieces you like. Mix all the ingredients together in a medium bowl.  Adjust the seasonings if you like.

10.  Serve.

Dinner is ready. It tastes much better than it looks in this photo. I promise.
